Close your eyes and picture this: long wooden tables tucked between rows of blooming lavender, the scent drifting on a warm coastal breeze, a chilled glass of wine in hand, and plates filled with food grown just down the road.

It sounds like the French countryside. But it’s actually Saint-Γ‰douard-de-Kent. 

On a golden summer evening, I found myself stepping into this dream at Farm-to-Table NB’s Dinner in a Lavender Field at Lavender at Ocean Breeze Farmβ€”an experience that feels worlds away and yet beautifully, unmistakably home.

And somehow, for a few slow, sun-soaked hours, New Brunswick tasted a little like Provence.

Lavender Cocktails & Sunlit Fields

The evening unfolds gently, the kind of gathering where you’re encouraged to linger and let the pace of the farm set the rhythm.

We began inside the lovingly restored 150-year-old barn with refreshing lavender-infused cocktails crafted by Garden Bar NB and generous Brie and Honey NB charcuterie boards piled high with local cheeses and sweet bites.

Glasses clinked.

Conversations sparked.

Laughter echoed against the old beams.

Then we wandered outside.

Long tables dressed simply with fresh posies stretched toward the fields, the Northumberland Strait shimmering just beyond. Purple rows swayed in the breeze, and the scent of lavender hung softly in the air.

It felt dreamy. Effortless. Unhurried.

And just when you think it couldn’t feel more magical, the evening shifts from mingling to dining.

Memorable Magic in Every Moment

Our Farm-to-Table NB host welcomed us like old friends then our Lavender at Ocean Breeze host gave us a guided tour through the property before settling us at the table. Live jazz floated across the fields as the first course arrived, setting a relaxed, soulful tone for the night.

Each dish came thoughtfully plated and paired with wines from Magnetic Hill Winery, celebrating seasonal flavours and local growers.

Course by course, the meal unfolded.

Conversation deepened.

The sky softened.

By twilight, we found ourselves wandering through the lavender once more, the day fading into that golden-blue hour that makes everything feel a little bit sacred.

Experiences like this don’t happen by accident. They’re thoughtfully created β€” and at the heart of it all is one woman with a vision for gathering people around food and community.

Farm-to-Table NB: More Than a Meal

Founded by Chanelle Belliveau, Farm-to-Table NB is rooted in intentional living, locally sourced ingredients, and the simple act of bringing people together around the table.

What began years ago as small cooking classes inspired by holistic nutrition has grown into seasonal communal dinners, workshops, and hands-on culinary experiences across the province, each one encouraging people to slow down, connect, and appreciate where their food comes from.

Chanelle has a way of making everyone feel at ease, like you belong there, whether you’re chopping vegetables or simply pulling up a chair.

And she’s still growing, still learning, still saying yes to what lights her up.

A Feast Worth Savouring

Meals like this don’t simply appear β€” they’re rooted in years of care and craft.

While menus change with the seasons, our multi-course dinner celebrated New Brunswick’s bounty beautifully:

  • Walnut & goat cheese salad with lavender vinaigrette

  • Cucumber & avocado gazpacho

  • Lavender-salted lamb with roasted potatoes, lentils, and spring vegetables

  • Earl Grey & salted caramel brownies

Each course paired perfectly with local wines, each bite tasting like summer itself.

Following Her Passion β€” Still Growing, Still Teaching

Chanelle’s journey doesn’t stop at the farm table.

Today, she also teaches at Brix Experience in Dieppe, leading cooking classes for both kids and adults β€” sharing everything from kitchen basics to seasonal, intuitive cooking. It’s another way she builds confidence and connection through food, one class at a time.

She recently completed a two-year Culinary Arts Management program at NBCC Moncton, reinvesting in her skills while continuing to grow Farm-to-Table NB with the same heart that started it all.

The Dreamy Setting: Lavender at Ocean Breeze Farm

Of course, even the most beautiful meal needs a setting to match.

And this one might be the most breathtaking dining room in the province.

Lavender at Ocean Breeze Farm stretches across four fragrant acres near the Northumberland Strait, home to nearly 20,000 hand-planted lavender plants that bloom in soft purple waves each summer. When the ocean breeze rolls through, the whole field seems to sigh.

It’s peaceful. Grounding. Almost transportive.

Owners Carly and Paul Boileau weren’t farmers when they began β€” just dreamers willing to learn. Armed with YouTube tutorials, second-hand equipment, and plenty of grit, they planted every single lavender plant themselves.

It was a leap of faith. A labour of love.

Today, visitors wander the fields, sip lavender drinks, browse handcrafted bath and culinary products, and take part in workshops and seasonal events that keep the farm humming year-round.

It feels personal because it is.

Together, Chanelle’s table and the Boileaus’ fields create something rare β€” food, land, and people woven into one shared experience.

A Maritime Memory You Carry Home

What I love most about Dinner in a Lavender Field is how naturally everything comes together β€” good food, generous hearts, and land cared for deeply by the people who call it home.

No rush. No noise. Just connection.

It isn’t simply a meal.

It’s the scent of lavender lingering on your clothes.

The sound of laughter drifting across the fields.

The quiet reminder that some of life’s most beautiful moments happen when we slow down enough to notice them.
